Harvest is Here: A New Chapter for Limestone Track
The nets are in place at Limestone Track for the final stage before harvest.
As the Daylesford region is a buzz with the energy of another harvest, we visited Limestone Track Vineyard. Following a significant multi-year reset to rejuvenate their vines and unique soils, the vineyard is now hitting its stride with fresh infrastructure and a renewed focus. We sat down with owner James to understand how he is working through this years harvest season.
Is harvest early, late, or right on time this year?
Harvest is close to on time. We had a cooler start to the season, although recent weeks have been warm. Different varieties ripen at different times, so harvest naturally rolls out in stages.
What signs tell you it’s time to pick?
We look at flavour first, then numbers. Baume, pH and TA guide us, but seed colour, skin tannin, and overall flavour development ultimately determines the picking date.
How early do your harvest days start?
Early, typically at first light. Fruit comes in cool, which protects aromatics and gives us better control in the winery.
Which varieties are coming off first in March?
We are anticipating harvesting Shiraz from a local vineyard for Rosé first, followed by our Tempranillo and then Merlot, which will form part of our blends.
What excites you most about this year’s fruit?
A few infrastructure improvements over winter have lifted fruit development this season. We are seeing better balance and evenness across blocks. We also have something special arriving in the winery that we are looking forward to announcing.
What keeps you up at night during harvest?
Weather, birds, and wildlife. Rain close to harvest can cause swelling and disease pressure. Birds see it as an "all you can eat" buffet. We have improved our netting this year to reduce that pressure, but it is always something you monitor closely.
What might visitors notice if they come during harvest?
Energy and activity. Fruit coming in, sorting, crushing, and ferments kicking off. It is hands-on and purposeful, but there is always a good atmosphere.
Why is this time of year so special for winemakers?
It is decision time. Everything done over the past months shows itself in the fruit. Harvest is where farming and winemaking meet.
